What exacting does Korean immigration do once your degree copy and background check is given to them by your future employer?

Also about how long does it take?

They process other peoples paperwork.

If you are asking what is the process and have been unable to locate the FAQs (frequently asked questions) then a quick answer might be something like:

1) accept your documents from your employer.
2) Confirm to their satisfaction that you meet the requirements of the visa.
3) issue a visa confirmation number.
This part of the process takes from 4-15 working days (depending on how many applications they are processing at the same time as yours - very busy in Jan-Feb)

4) once the visa issuance number is sent to the employer, they will forward it to you.
5) you go to the Korean consulate in your home country and apply for a visa.
This is usually an overnight process but can take up to a week - consulate dependent.

6) you get on a plane and head for Korea.
7) you get off the plane, go through passport control, get your entry stamp and activate your E2 (done automatically as you get your passport checked) and head for your new home.

Its been 7+ working days for me, and I thought it would be faster.

By any chance, do you know if they contact the FBI (or national law agency of your county) to verify your lack of criminal history?

Do they contact your Alma mater to verify your academic credentials?

If they do, is that why it can take so long to hear back?

AFTER you sent the documents to your recruiter they need to get from your recruiter to the employer and then the employer needs to get from their desk down to immigration.

If everyone isn't on the ball and in a rush, that alone can take a week.

Then, add another 4-15 WORKING days (up to 3 weeks) at immigration to actually issue the visa confirmation number.

AFTER immigration issues the number to the employer (usually by sms /txt message to the cell phone listed as the contact on the application) it needs to make its way back to you.

If anyone is asleep at the wheel you can add another couple of days.

Immigration doesn't actually confirm that the documentation is real, beyond the apostille. They don't check the alma mater other than to ensure that it is not on their list of degree mills.
