Hi there, first post so would really appreciate any help....
I've been here 3 years now and am quitting my latest EPIK contract 6 months in because I would rather leave at the end of a school year than in the middle of one. (doing everything legit - 60 days notice, all my cos know and are fine about it etc..)
The thing I need to know is, after my final day of work do I have to get out immediately - even though my ARC expires at the time of contract (so 6 months after i will leave my public school)
In other words does terminating the contract also terminate my ARC or does the original expiration of the ARC still stand?

If you cease employment you have 14 days to notify immigration of your change of status. They will then give you 30 days from your last day of work to find a new job and get the paperwork done or leave the country.
If you don't notify immigration you have the 14 days to leave or be in violation of immigration law regarding the requirement to report a change of status.
All that said, if your school does not notify immigration they you could probably stay (illegally) until your ARC expires. There is a risk that you may be discovered and a fine and exit order would be the likely result.

Could you point me in the direction of the website where you find this type of information and indeed the way to contact Immigration about change of status.
I've used google searches but keep coming up with very unnavigatable Korean government pages.

If you read Korean, then naver or just go to the immigration website.
If you don't read Korean then some of it is on the English website and the rest you get over the counter at immigration.
