Once you have a visa confirmation do you just need to send your passport to the embassy for your visa stamp? Or do you have to go in person to get an E-1 visa stamp when you have a confirmation number?

Are you in Korea? If so you will need to visit an embassy outside of Korea to get your new visa, I just did mine in Bangkok but there are plenty of other places. Japan would be the easiest and cheapest.

If your not in Korea then not sure if he embassy nearest you will accept postal applications, you still might have to visit them in person. Try emailing them and see what they say

In your home country then postal service (EMS / priority mail service) is an option (with prepaid return).

NOT in your home country then a personal trip to the embassy/consulate is in order.

I am in my home country. I called the Korean Embassy and they told me to send my passport with a few extra passport pictures, my confirmation # and self-addressed overnight postage paid envelope so they can use that to send back to me after processed.

Too simple!I wonder why anyone would want an E-2 visa instead.

Because their job is, "Teacher of a foreign language" and by definition that is an E2.

E1 is technically, "Visiting professor / Guest lecturer" and NOT all employers can sponsor one.
