I posted my contract and all the other things you need for the visa application to my school recorded delivery to my school and was told by royal mail it would take max of 3-5 days and I could track it the whole time.

Lie 1) you cant track anything sent by royal mail outside of the UK

Lie 2) they only guarantee the recipient will receive it within 24 days not 5

My school hasn't received it yet and I'm supposed to flight out in exactly 2 weeks. I have tried complaining, but all I get is "Your package is in Seoul, if it is not delivered within 24 working days from the date you sent it, you can put in a claim for the value of the contents"

What is the shortest amount of time it takes a school to get the visa number? I was told between 5-8 days, but I'm starting to really panic. I live just outside of London so get my passport stamped with the visa is something I can do on the day I receive the number, but will the school replace me if they don't receive my documents in time?

Unless policy has changed, it takes 5 working days to process a visa once you hand your passport over to the embassy in London.
