If I change my E-2 visa to a D-10 visa when I finish my contract, can I leave the country and return while on a D-10 visa?
Also, when I do find a job and switch back to a new E-2 sponsored by my new employer, do I have to resubmit my documents?

I think you can but you have to get your new ARC first.
I don't think you have to resubmit new documents unless you were getting a completely new visa - finding a job after a D-10 means a transfer back to E-2. |

Yes, you can leave for a vacation after you get your ARC.
No, you do not need new documents unless you are out of the country for more than 90 days (consecutive). Simple transfer to go to back to E2.
