The wife wants to quit her job and learn Korean.

Is the one-month Sogang summer immersion program worth it? Will my wife go from knowing no Korean to being able to have conversations in Korean?

I found their regular 10 week course to be pretty "immersive". There was hardly a moment of the day when I wasn't in class, doing homework, reviewing or previewing work to keep up with the other students. I can't imagine them piling on even more work in an "immersive" program.
That being said, their program is excellent. I'd have to think their summer immersive program is also top-notch. I also hope to hear from some others from the immersive program.

Sounds interesting except this might be a problem if she wants to study Korean this year:

"The deadline for the online application is May 1st:"

Languages institutes are a little more lax on the application deadlines. If you go there in person you might still get a place assuming there are any places left.
