I am currently living in London with a New Zealand passport. To get my E2 visa do I need to go back to New Zealand or can I get the visa approved from London.

You can get it in London if you have a visa confirmation number issued from immigration in Korea.
You DO need your documents authenticated in NZ and that might be problematic while you are in london if you don't already have authenticated CBC and Degree copy (apostilled in NZ).
