I haven't signed any contracts yet... Just curious what happens if you sign a contract and then find a much better option before you leave for Korea?

There are 3 stages:

1) You back out before any paperwork is filed with immigration.
There is NO consequence for backing out at this stage (other than the lost job) even if you have agreed to and signed a contract.

2) The employer has applied for the visa confirmation number at immigration. (you have sent your paperwork including apostilled documents) *note: you WILL NOT get them back.

If you back out at this stage you are effectively hanging yourself for 90 days.
The VCN is NOT transferable to another employer and immigration will not issue a new one while there is one outstanding. They expire 90 days after issue.

You will also need new apostilled documents to start again if you back out here.

3) The visa has been applied for (but you haven't got on a plane yet).
This can effectively hang you for:
- 90-days - most visas expire 90 days from date of issue if not used so you can start the whole process again after it expires.
- up to 1 year if you are American (they get a 1-year multi-entry visa so it takes a year for it to expire before you can begin again).

You CANNOT cancel the visa from abroad and it cannot be used with another employer. There is no cheap, easy solution other than trying China, Japan, Taiwan, Vietnam or Thailand and looking at Korea again next year.

So basically if I sign something this week and send no paperwork to immigration (we are waiting for background checks and apositlles anyway) and then sign something the next week, I'm okay.

But keep in mind that the longer you wait to submit the documents, the greater the chances that the school will hire someone else who already has the documents ready.
