How would you define "venture" as it is used here? "start-up"?

If you're talking about "start up" then it implies business. So, "endeavor" works best. Don't ask me to define endeavor.

Here in Korea. Business people are always saying they work for a "venture"--although it doesn't seem that they mean a "venture capital firm" in the Peter Thiel/Silicon valley sense venture capital sense.

Start-up. It's a bit of Konglish. Venture capital firms aim to provide a channel for investors to supply capital to the start-up businesses, so they end up getting called ventures/venture firms here.
