I missed the last veggie club dinner, but I remember hearing someting about a recipe exchange. Let's try to get this rolling, Maybe a yahoo group or something?
Just got a package from home with a Moosewood cookbook in there, so I'm kinda looking forward to cooking again! |

heres a quick simple one for all you vegetarians.
take a carrot, wash, peel and eat.
variations, peel, wash and eat. Or just eat!
Seroiusly though.
Take about 6 potatoes and cut in half. Take each half and slice in thin slices. Take two onions and julienne. Take two carrots and also slice into about 1 cm thick slices. Mix in some salt and pepper(I like using white pepper, makes a sharper flavor) and a little butter or margarine. If you have an oven but in a casserole dish and cover and bake for about 1 hour. If you only have a 2 burner put in a pot with a lid on and cook at a low heat. After about 15 minutes give it a quick stir. It is important to keep as much moisture in as possible so that it steams rather than fries. |

Grrr! Though a often as not that and small tub of dip is my lunch. Discovered that a nearby grocery store carries avocados so I make the laziest guacamole ever.
1 avocado, pitted and diced,
a little red onion, diced
a couple of squirts of lime juice
ground pepper
mix, then pat saran wrap down onto the guacamole to keep it from browning Try not to nibble between classes. |

My favorite Korean style vegetarian recipe:
1 cup brown rice
1/2 cup mixed grains (that mixed stuff with beans and grains)
one small package mixed fresh shelled beans
2-4 whole cloves garlic
about a tbsp of grated ginger
2-4 whole hot peppers
salt
Cook this all together in a rice cooker.
I eat it with sesame oil and soy sauce.
I reheated some with fresh spinach and tofu for breakfast this morning and ate it with kochujang.
It's great refried crispy on the bottom with an egg on top. Nice with some sharp cheddar.
This is really healthy, with a lot of protein. |
