I've got a hankering to cook a pot of good ol' fashioned chili, but I don't really know how to.

I've been searching on recipe databases, but most of the recipes involve strange and exotic ingredients that I doubt I'd ever find in my local Grand Mart.

Could someone post a fairly simple chili recipe that's not too hard to make with local ingredients? I've found canned kidney beans, canned tomatoes, and I already have chili pepper.

Bonus points if your recipe is creative with uniquely Korean ingredients, like gochujang or kimchi. Very Happy

my chili

I either use diced chicken breast or pork tenderloin for the meat. Chop into desired size.

Brown off meat along with copious amounts of garlic.

Add in diced onions, green peppers(red are also okay) sliced mushrooms .

Open a can or two of kidney beans, baked beans, whole tomatoes and simmer off all together.

Add in pepper, chili powder.

to give it a Korean flair add in some chopped kim chi and a big bunch of gochu. DONT use gochujang the flavor is ummm wierd!

Three large onions
1 pack of mushrooms
8- 20 cloves of garlic
10 hot pepper
salt
pepper
olive oil
2 bottles of red wine(soju optional)
5000 won worth of cherry tomatoes (Current prices)
400g pork
400g beef
chili powder
1 or two cans of kidney beans.

STEP 1
Chop onion and garlic(half). Add olive oil to a large pot and sautee onions for about a minute. Add tomatoes a cup or two of wine,Drink one maybe beer, maybe soju. Boil the bejeezulus out of her for a about twenty minutes. Reduce heat and simmer on low for a long long time. (the longer the better) Drink another glass of wine and take a shot or two of soju.

STEP 2
Chop one onion, crush and chop garlic cloves, slice mushrooms.Have a beer. Preheat large frying pan, sautee onions, garlic and mushrooms, gouchus untill the onions are slightly translucent add: soju salt and pepper to taste. cook meat untill brown (it helps to put the pork in first) Finish off the first bottle of wine and open up the second.

Step 3
Have a cup of wine
Combine meat and sauce and add beans. Simmer for another 15-30 minutes add chili powder, salt and pepper to desired taste.

One-Pot Chilli (Large pot)

Ingredients:

2 pounds of Hamburger
8 red chilli peppers (chopped fine)
1 large onion (diced)
10 garlic cloves (chopped fine)
3 cans of Kidney beans
1/4 cup of honey
2 cans of Brown beans
1 Tablespoon – Montreal Steak spice
1 can of tomato sauce or 2 cans of stewed tomatoes
1 Tablespoon – Seasoned salt
Green bell pepper (diced & seeded)
1 can of sliced mushrooms (drained)
2 stalks of celery – diced (if available)

Cooking Instructions:

1. In all steps, stir the mixture every two or three minutes.

2. In a 6 – 8 litre cooking pot, cook the hamburger over medium heat until it is browned thoroughly.

3. Once it is cooked, drain the excess fat off of the hamburger.

4. add the onion, chilli peppers, celery, bell pepper, mushrooms, and garlic to the hamburger and cook for 5 – 10 minutes or until the onion is translucent.

5. Turn the heat to low.

6. Add all of the spices and cook another 5 minutes.

7. Add the rest of the canned items and the honey.

8. Let the chilli cook under low heat, stirring occasionally, for 30 minutes.

9. Serve in bowls with bread or buns.

Other Serving Suggestions:

a. You can change the chilli peppers to crushed, dried chilli��s if preferred and you can change the amount of chilli peppers to suit for extra hot or mild.

You can also serve this with grated cheese sprinkled over top and melted. If available, you can also add a spoonful of sour cream to your bowl to give it a creamier texture.

http://www.yoricome.com/ has a decent-sized container for 6,500 and http://www.grocerymall.net/ has a slightly smaller one for 5,000. Many gray market shops also have it.

In any supermarket in America. Just don't forget to put it in your suitcase afterwards.

While chili powder will suffice in a pinch, so to speak, the core spice in the flavor of chili is cumin (preferably seeds, but the powder will do). I've never been able to find it in Korea, though.

I used Korean red hot pepper (dried) instead. It definitely changes the flavor a bit, but it's not bad. Thanks for the recipes, all. It turned out great. The girlfriend loved it, too, so now I'll have to make it all the time. Very Happy

The Middle Eastern grocers near the mosque in Itaewon carry it. http://www.grocerymall.net/shop/index.htm?fc_2004=view&COMM_001=&COMM_002=ITEMS&sn=20040417040431&id_no=33 has it too, but the price is high. (Think I paid W2,500 for a sizeable box in Itaewon.)

Dawn ,thanks for the tip. it's almost worth a trip into the Big Kimchi just for that (along with a freightload of salsa and cheese, of course).
