Anybody know? In Korean it's �ɵ�� but I know nothing about meat. Flower sirloin just doesn't sound right. |

�� means flower and I am sure it means calf meat or venison. Any kind of meat with �� means baby. Confirmed by my Korean boyfriend,too. |

Venison is deer. I think you meant veal. |

Yeah, well my Korean girlfriend can beat up your Korean boyfriend
She says Koreans don't eat baby cows, just us savage Westerners, and you can quote her on that!
Seriously, she says that the �� just refers to the pattern that the fat makes in the meat, not that it comes from a baby animal of any kind. |

yeah but look at all the underdeveloped seafood they eat... no size limits... so either they like baby seafood, or midget seafood.

Your girlfriend's spot on about the pattern on meat and it's name...tho i gotta disagree about the veal...cos i eat veal and i'm korean! And before you threaten to have your kgirlfriend beat me up, my brit boyf can kick all of your asses so watch it! you've been warned! |

It's not veal. Or at least its not any kind of veal that I'm use to. Veal should be less marbled, with less surrounding fat, and lighter in color. If you look at the muscle (meat) its from a well exercised part of the cow. Can't really tell between round or chuck, but I'd put my money on chuck. If you look at the cut on the lower left you see a cut of beef that looks very similar to brisket.
No matter where in the world you are, beef is always divided into primal cuts. That is rib, loin, chuck, and round. This are then divided furthur into the cuts, this is where different cultures have different cuts (In Korea you will see cross cut ribs) |
