My Mom raised me to always put vegetables in the drawer at the bottom of the fridge labeled "crisper" or "vegtable crisper" and I always do it, but I'm wondering... what does it do? Does it keep vegetables fresh or "crisp"? And if so, how? |

I had some lettuce in there for about 8 days and it became smaller and definitely not crisp. I had some carrots in there for the same length of time and they stayed firm. |

The crisper drawer maintains a steadier temperature. Whenever you open the fridge all the cold air basically falls out and it takes time for the temp to return to normal. It also has less humidity in it as with temperature fluctuations you also have humidity fluctuations as well. |
