Hello everyone. Been here for a bit now and am trying to figure out some good recipes with the veggies available. I'm from the South and my idea of a vegetable is corn or green beans. Not used to the variety of veggies found here and wanted to see if anyone can give me a few hints!!!
I have found some outrageous baby spinach salad recipes and a good baked zucchini fry that I just tried. Any thoughts on bok choy?

Take a look at VegWeb.com, there are tons of recipes, use broccoli, zuccini, and the tofu here is AWESOME! Make chilli with canned kidney beans, or shepards pie with lentils, or marinade tofu with soysauce, ginger, and garlic and then pour sauce over wilted bok choy, or pumpkin mash, or fried rice, or stir fry, it's possible to find coconut milk for thai curry, it's not that hard but it took me a while to get the recipes!

I bought a metal steamer recently, and I highly recommend those of you who don't have one to pick one up.

A mix of brocolli, carrots, and zuchinni steamed and smothered with I Can't Belive its Not Butter tastes great.
