Depends on where I order it.
If I'm assured of the quality/age of the meat and the competancy of the cook I'll go rare to medium-rare.
Otherwise very well done is neccessary safety precaution.

But the last time I actually ate anything approaching steak in a restaurant was eons ago.

if there is blood! its right for me!!
RARE or med/RARE is the only way to eat steak!!
I know many chefs who will not accept orders for welldone!
they tell the waiters! tell the customers we only make medium otherwise they can order something else hahahaha
A chef wont destroy a piece of meat!

Bo, if you haven't already may I suggest you try deung shim. There are (were?) some good deung shim restaurants around Yangjae sta. just off Tehran ro close to the pedestrian overpass.

I cook steak quite regularly and it's always med-rare.

I went to a raw beef restaurant recently too but that sucked. Gave me diarrhea for a week.

Burnt on the outside, pink and a bit bloody on the inside.

I worked as a waiter in a good restaurant for a while and it's amazing how many idiots don't know what medium is. Medium has a bit of pink. No pink at all = well done. Medium does not mean no pink. So many steaks were sent back. Idiots.

It's important to remember when you go to a "steak restaurant" in Korea, they cook your steak 1 to 2 levels under what you order. in other words, their version of medium is our version of rare to medium rare. So, if you want it rare, order a medium. If you want a medium, order a well done.

Agreed.

I have to order well-done to get medium everytime I eat steak in Korea.

If I'm really confident of the quality of the steak then I'll ask for medium-well to get medium rare. Frankly, with most of the steak I've been served in Korea, I would never eat a rare steak here. Which I do enjoy at home.

The ones who say such nonsense probably work at a steakhouse (ie. guys that don't have high standards or a reputation to maintain). My brother is a gourmet chef who has cooked for some of the best restaurants in Canada and France. He'd never say anything like that.

I used to order medium-well, back when I was a willing accomplice in the wanton slaughter of defenceless animals. (that was months ago, though the carnage will probably start up again before long) After coming to Korea, I probably eat steak less than once a year.

Meat is Murder.

Where are Big_Bird and Red_Dog these days?
