I am trying to implement a low-carbohydrate diet, one that is free of the simple, starchy carbs like rice and noodles and that essentially consists of meat and vegetables. Because typical Korean cuisine is usually a high-carb affair, I am relegated to preparing my own meals. My quest is to find some good, SIMPLE recipes to make these foods tasty, especially the steamed vegetables. Finding the right sauces and spices has been my greatest challenge along with creating a variety of dishes so I'm not bored of the same fare night after night. If you have any ideas or Web links for easy-to-prepare dishes of this kind, I would appreciate your passing them along. Thanks. |

Cook your greens - anything green, including a bag of the various types of leaves that you can buy at the supermarket (where you pick your own).
They only need about 60 seconds in boiling water. Drain them WELL. Absorb extra moisture with paper towel until they are dry.
Lightly season with good quality extra virgin olive oil mixed with lemon juice -- 3x as much oil as lemon.
You can add a bud of garlic to the boiling water and then mash it up to add to the greens, too.
Add salt and pepper to taste.
Perfect every time! |

I like my veges and salmon with a dab of sweet chillie sauce... gives it a nice little bite. |

Do you have a rice cooker?
A Friend of mine just turned me on to this alternate use.
Take a whole chicken (you can probably get one at the market/grocery store for around 4000 won). Cut up an onion into big chunks, put it in the abdomen with some garlic. Put it in the rice cooker. Put in about an inch of white wine (with some water and olive oil as well), sprinkle in some salt and pepper.
Now push down the button and walk away. In about an hour, you have delicious, meat falling off the bone chicken. Not only that, your apartment will smell great.
It also works with pepper and lemon (about one half).
It is super easy, and makes anough for three or four meals, depending on how much you eat. You can even cook the chicken straight from frozen, just push the button back down after it pops up (give it about an hour and a half).
It sounds more complicated than it is, it only takes about ten minutes to prep.
As for veggies, I suggest Worcestershire (sp?) sauce. Just add a little of that to any stir-fry. Personally, I like them just plain, so I can't help much here. |

It's probably the most unhealty thing ever, but this is some tasty stuff and can be done with very few carbs. Typically unhealthy stuff is almost a must if you're going very low carb since it can be difficult to get enough calories if you try to eat only veggies/lean meat.
Big pot + browned ground beef + rotel (cans of hot tomatoes and chilies... if you can get the actual Rotel brand, the extra hot kind in the red can has fewer carbs than the others) + taco/burrito seasoning, serve covered with lots of cheese and sour cream (not the low fat kind, as it has more carbs) and some jalapenos. You can alter the quantities to everything to taste and desired carb intake, just be sure to watch the carb count if you get the seasoning packs, as they have way more carbs than you'd think.
A quick and easy thing is to dump some chicken or pork into a crock pot with some cream of mushroom. Very tasty and so long as you don't just drink the goo, it's pretty low carb.
If you need to get more calories, just dump some cheese and sour cream on whatever you're eating or add some olive oil. |
