I should note first, that I fully intend to finish my contract. The school has become tedious, but not so tedious that I would give up my severence pay, etc.

What sort of things should I put on my resume and cover letter? Any suggestions for photos? Would a photo of my E-2 in addition to my passport be a good idea?

Thanks.

So this is the end of your 2nd contract or 3rd?
What are you looking for?
It's easier to give GOOD suggestions with that in mind.

If you want kids (public elementary), then pics of you doing FUN stuff with kids...
If you want high school, then look professional, shirt and tie in a class...
If you want a UNI or Unigwan they will tell you specifically what they want in the package then look the part and come loaded for bear.

If you want a haggie... Bob's yer uncle... It is a sellers market and you have the goods... the option to say yes or no is yours. Pick 30 and negotiate your best deal...

This is the end of my first contract.

I'd like to work with adults again, but smaller classes... individuals if possible.

When I am working on my resume how much of my life before Korea should I prune? If I don't I think it will push the resume into a 2nd or 3rd page...

I've never put a photo on my resume in Korea, but they always get it with my passport scan. I guess it's your choice. You can do it kind of Korean style with the pic on the left side at the top of the page and your personal info to the right if you want. As the previous poster mentioned it'll depend on what position you're applying for. If you want adults, stick with the professional look. It's your choice, but you should probably highlight the positives of your Korean experience(with emphasis on your workplace) so far on your cover letter. WRT the resume, you'll have to prune a little as three pages is way too long. If all work related experience is in the teaching field, you may want to shorten the details on the less recent positions.
