Will three large suitcases + a carryon be okay? Is there a limit? I couldn't find information about it on their web site.

I highly doubt there is a limit, but I would call Korail directly and ask.

I also doubt that there is a limit, but good luck trying to get all that stuff up and down steps to the platform by yourself (there isn't always an elevator), and getting it on and off the train.

On the KTX there are baggage racks at the ends of each carriage.
On Mugunghwa trains there may be a little space as well at the ends of carriages, but most of the time you find people sitting in that space when there are no seated tickets left.
