I want to go to Korea about 2 weeks before my job starts just to get settled in before I start teaching. I will have my job lined up before I go.
How will this affect my VISA? Can I get a work VISA that allows me two extra weeks at the beginning? Will I have to do a VISA run?

If you have the E2 in your passport when you enter Korea, the one year limit starts when you get your entry stamp.
If you an enter 2 weeks before your job starts. No problem there.
The only inconvenience is next year when your visa expires 2 weeks before your contract. You will have to get a short extension.
It is easy to get during the last 30 days of your visa period. Cost for a visa extension to meet your contractual obligations will only cost 30,000 won and the time to fill in the application.
