Funny you should ask. I just happen to have a recipe for Jollof Rice & Chicken. It's way easy, in spite of the long list of ingredients. I made it last week for the first time and really liked it.
1 T oil
1 onion
1 can of tomato sauce
1 t salt
1/4 t pepper
1/4 t cayenne
1/2 t red pepper flakes
1 T Worcestershire
1 t fresh rosemary
2 cups water
1 whole chicken, cut up (or just use 3 or 4 chicken bosoms , cubed)
1 cup rice
1 cup carrots
1/2 pound green beans
1/4 t nutmeg
1. Saute the onion in the oil
2. Add the tomato sauce, spices, water and chicken and simmer 30 minutes
3. Add the rice, carrots, green beans and nutmeg, bring to a boil; reduce to simmer, covered for 25 minutes.
Eat!
Obviously you can tinker around with the veggies. Before the rice is done, take a taste and adjust for spiciness.
OR: How about Chicken and Peanut Soup?
1 cut up chicken (or several knockers --I use 3 or 4)
2 onions, chunked
2 stalks of celery, sliced
1 t salt
2 qts water
6 oz. tomato paste (small can)
1 cup of peanut butter (with or without chunks)
1 apple, diced
1 or 2 potatoes, diced
1 red bell pepper, diced
pinch of cayenne
1/4 t black pepper
1. Saute the onion and celery
2. Add the chicken, salt and water and simmer till the chicken is done (time depends on if you use breasts or not)
3. Add the tomato paste, peanut butter, apple, potatoes, red bell pepper, cayenne and black pepper. Simmer till the potatoes are done (about 20 minutes)
If you are just looking for spiced up Chicken and Noodles, just add more pepper (white is best, but black is just fine).
I have one or two more that are quite good if you are interested. I love a big bowl of Pepper Pot Soup on a cold day. |

Fireball chicken soup
Saute garlic and onions in a pan with a little oil, brown off chickent breast(or chicken peices of choice)cook until brown, drain off any excess fat.
Fill pot with water. Add in carrots, celery and your choice of starch(rice, noodles potato)
Season with black pepper, cayenne pepper, thyme a dash of gochujang. Bring to a boil and simmer gently. Salt to taste.
If you want it really hot add more pepper.....but remember! You can always put more spice in....but you cant take it out! |
