I need to extend my tourist visa and I was thinking of taking the ferry over to Fukuoka. Any idea how long I have to stay in Japan before I can return? Thanks!

Are you talking about a tourist visa C4 or a visa waiver B1 or B2?

If you are talking about the waiver stamp on arrival (b1-b2), then you don't have to even leave the ferry.

You simply must leave Korea (have your exit stamp) and then you can re-enter on the same day (get a new entry stamp) at passport control on your way back in.

If you are talking about a C4 then you will need overnight while you go to the consulate to get the new visa placed into your passport.

.
