I had a great burrito the other day, loaded with black beans and rice. It inspired me to try a bit of cooking. I bought an 8-can pack of S&W black beans at Costco. There's just one recipe on the back and not a lot of cooking instructions. I suppose I could search some cooking site to find out what to do with them, but eslcafe seems generally a faster way to get random advice.
So, I'm wondering:
- are black beans pretty much ready to go right out of the can for salads?
- any good simple recipe ideas out there?
- besides salsa, what other sauces and seasonings would be good?
Any advice that might expand my limited cooking ability will be appreciated. |

You need to rinse the beans after they come out of the can. Pour them into a strainer and run water over them until it runs clear.
Here's an easy no-cook summer recipe involving black beans (not a burrito, but...)
Pineapple-Black Bean Salsa
1 large can chopped (not crushed) pineapple (hopefully packed in juice, not syrup) or get the equivalent in fresh, chopped pineapple. (I usually pick up two containers at E-Mart.)
2 cans black beans (or 2 cups dry beans cooked up, if you do that at home, like I do)
1 medium to large onion, coarsely chopped
Minimum 3 cloves of garlic, finely chopped (maximum is up to you).
2 bell peppers (different colors, not yellow - for visual effect), chopped
1 jalapeno or other hot pepper, finely chopped
1/2 cup packed chopped cilantro (parsley is an acceptable substitute)
Cumin and Coriander to taste
1 Tablespoon rice wine vinegar
Combine ingredients in a coverable dish and allow to sit for an hour or so in the fridge. Serve either as a side salad or with chips, as a dip. |
