Since people were willing to help JongnoGuru, I was hoping people here would have some ideas on cooking some fish. I promised to cook for the family and we have some nice salmon fillets. I have a roaster for cooking in, but am out of ideas for something different to do with them. Last time was lemon and butter. Any ideas?

No need to do anything different with them. Good salmon is best when cooked all by itself (or with a slight sprinkling of black pepper) to the point of perfection. Let people season with lemon at the table if they want. But then I'm a purist.

How about some sort of maple glazed salmon?

Roasting tends to dry out the fish, however you could poach it in the oven :

Poached Salmon with Ginger Recipe

Serves/Makes: 2

Ingredients:
1 pound Salmon fillet
1 tablespoon ginger root, grated
3 lemon slices
3 tablespoons dry white wine
1 tablespoon lemon juice

Directions:

Set oven to 375F(190C). Place salmon fillet on 2 layers of aluminum foil, large enough to make a tent over the fish. Rub ginger into salmon, cover with slices of lemon. Sprinkle wine and lemon juice over the fish. Fold foil so that it makes a tent with the end sealed too. Place on baking sheet and bake at 375F(190C) for 20 minutes (or longer if fillet is thicker than 1 inch). carefully unfold the top of the foil. Transfer fish to serving platter. Pour cooking juices over fish and serve.

Analysis per serving Carbs: 5.8g Calories 305.5 Fat: 8.0g Protein: 45.9g

Fry it. But, very importantly, don't use oil and make sure the pan is hot as hell before putting the fish on, otherwise the fish will stick to the pan and that really sucks. A pan and your fish and heat - effective, simple, tasty.....and courtesy of Jamie Oliver in my case. Very Happy

The same thing can be done with steak.

Yeah Jamie is the man. No need for oil as Spinoza says. Salmon is an oily fish. Skin side down first I think ?

No skin on the fish, I might fry it, (the pan is easier to clean) but thanks for the ideas. I might sprinkle a little paprika on it.

Salmon is very easy to cook. I marinate in soju and soy sauce, put in some cabbage kimchi near the end.

But I can't cook any other kind of fish. It almost always goes in the trash and i go out to eat.

A friend of mine used to marinate salmon in soju and then make some kind of batter and fry it. Man that was the best salmon I've had in years.

Salmon fillets, wrapped in procuitto or parma ham, a light rubbing of olive oil and some fresh ground black pepper, in the oven or under a hot grill for 8-10 minutes.....perfection! (Also thanks to Jamie Oliver)
