i am trying to figure out what e-mart or homeplus is the easiest for me to get to, but since i can't read hangul, it is pretty tricky to navigate the websites.
i live in itaewon and work near apgujeong station.
also, does anyone know if these places sell cake mixes and if they don't, where can i buy some?

They do sell cake mixes.
Betty Crocker ones, too!
Anyway... there is a walmart (or was walmart, now e-mart, I guess) in Yeoksam-dong 755.

There is one at Yongsan Station, in the basement, which might be closer for you living in Itaewon. |

Actually since you live in itaewon, your best bet would be the Yongsan EMART or the Seoul station LOTTE MART.
If you decide to take a taxi, it will cost you around 5-6,000 won. Even if you don't speak Korean, you can basically say Yongsan Station (Tell the taxi driver YONGSAN KTX STATION)---They will know where and the EMART is in the station complex. Also a new IPARK Department store. Or if you like LOTTE MART tell them SEOUL STATION KTX---The Lotte Mart is in that complex.
I would recommend EMART since there are a few more imported foods than LOTTE MART.
There are a few foreign food grocery stores in and around itaewon. You could ask a random foreigner and at least 75% of them could point you in the right direction.
Prices are a bit high, but if you need your fix, then its worth it. |

| There are more imported goods at emart, but I have to say that the SS Lotte mart kicks ass. I love that place. Large size clothes, good sales, cheap booze, and cat supplies. Its a great place. |

LotteMart usually has a few cake mixes, though, if that's what you're looking for! |
