I have been here a few years now and did most of the things I wanted to do, like
Learned Korean, dated a Korean, learned about the culture, visited most places in my lonely planet, been to jeju, lived in a city, live in the countryside, taught in public school and hagwon, etc
But I am leaving next year and was wondering if you guys have any good ideas on what to do or what one HAS to do before leaving?

Wow! Aren't you special! Now, you can brag to your little buddies back home about what you did in Korea. Can you imagine a Korean international student making it a goal to have 'dated a white woman'? Now you know how ridiculous your alleged 'accomplishment' sounds.

For me, I'd like to try kimchi. I haven't gotten around to it yet.

learned about the culture

That be a big statement, my friend. Do share.

I suggest a night at a minbak, a night at a pension, a night at a yeogwan, a night at a motel, a night at a love hotel, and a night at the Shilla.

A 'pension' is a mini condo sort of deal. Dolled up with a white picket fence, maybe a deck. Often perched with a view. Like a little cottage for travellers. Called 'pension', I imagine, as in 'pretty little cottage for a pensioner'. Goje Island has quite a few.

I'd say diving, paragliding, sea fishing, rockclimbing, on and offroad motorcycling, etcetera.....tons of good stuff to do.

Konglish (or maybe loan word French or something else) for rentable cottages out in the country, and thus a very likely spot for a MT.
You pack in all your food and booze.
Some look like this-
