Hi All,
This has nothing to do about teaching (which is why I chose the off-topic forum) but I didn't know where else I might find such a large group who might be able to answer my question.
I lived in Korea for about 9 months and developed a liking for kim-chi while I was there. I am now living in the States and recently bought a gallon jar of kim-chi. When I opened the jar, there was a loud pop and the kim-chi was bubbling. Is this normal?
I know that kim-chi is fermented but thought the fermentation would have stopped by the time it was sold. The kim-chi was in a fridge at the store and has been in the fridge since I got it home.
All the kim-chi I bought in stores in Korea came in pouches so I have not seen this before.
Every time I open the jar now there seems to be a slight pressure release and a couple of bubbles but it is nowhere near as much as the first time and I can't be quite certain that I am not imagining it.
The kim-chi tastes normal, well, as normal as kim-chi gets.
Should I fear the kim-chi? |

No. I also gracefully tolerate the whining of posters whose ire is raised by sock/troll commentary. ^^

P.S. For the record, I have never put any real effort into figuring out identities. I am just a sock-watcher. Phenomena pathetica are intriguing. |

| Ok guys, don't hijack his guys thread...To the OP, no the fermentation process doesn't stop; it just keeps on going. I've even heard that kimchi in sealed containers is not unknown to explode at times due to the built up gases released by the bacteria. |

True, true.
And I think it takes A LOT to make kimchi "go bad". Like Y!C said, the fermentation process never stops, but the effect that you get when wine is corked is really what makes kimchi so good. I don't think you need to worry. But when it doubt, you can always buy more. |

its a spicy pickled cabage.
it tastes sweet, slightly sour, and a little spicy.
it also gives you some mean breath... |

dont forget garlicky and salty, also depending on what kind you're eating, in what region of korea, the spiciness can differ a lot and taste fairly fishy
i dont really think there is anything i can think of offhand that remotely resembles the taste of kimchi
im sure though that if you took some salted, wilted cabbage and marinated it in sambal oelek and nam pla, you might get close (sorta) |

What does Kim chi taste like: Put some saurKraut in your smelly arm pit for an hour add some tobasco and a splash of butt juice.
Go to the local Korean market in your town and try some. Almost every medium sized US city I have lived in has one. Tell them that you are going to go to Korea and that you want to try real kimchi. Maybe the store owner will give you some homemade.
I actually love homemade kimchi. Never buy store bought it is absolute garbage. It is relatively simple to make but a little time consuming. |

Check kimchi recipes. It's mostly ginger, salt, cabbage, a bit of shellfish, red pepper. |
