If any of you live near Hannam Supermarket, I need some pita bread. Just one pack is fine, I think it will survive the post. In exchange I will give you one box of falafel mix in the post. I will mail the mix to you first, and just have to trust you with fulfilling your end. PM me. Having lots of falafel mix with no bread sucks. Sort of like a beer with no opener.

I have some lovely round flour tortillas. It says on the package they are "burrito size". I think they might go well with falafel mix.

deal. tortillas are equally good with falafel. send me your address, will be in the post monday AM. I like burritos too, so that works out well. So you know I am not a weirdo, my name is John, and I live in Incheon with my wife and baby. I like falafels, and have the mix mailed to me every three months, six boxes or so. Thanks for being a friendly foreigner, in my neighborhood there are so few of them! (Only really angry looking russians, and distressed indonesians)

Pita, tortilla, naan...they are all basically the same thing, more or less.

This recipe is for naan cooked on a grill...if you don't have a grill, just use a big skillet, the result will be close enough.

INGREDIENTS
1 (.25 ounce) package active dry yeast
1 cup warm water
1/4 cup white sugar
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 1/2 cups bread flour
2 teaspoons minced garlic (optional)
1/4 cup butter, melted
DIRECTIONS
In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
During the second rising, preheat grill to high heat.
At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

And thanks for the idea for supper. I have a whole day with nothing in particular to do, so cooking up something new and fun (never made falafel before) will be putting my day to good use.

No, I'm starting a food blog, but it won't be Korea based. In my usual procrastination lifestyle it's been in the works for 3 or 4 months now. Embarassed

I wasn't too impressed with my falafels, but the Greek Spinach rice side dish thingie came out terrific.


Saute 2 onions in a bit of oil.
Add a couple of handfuls of shredded spinach
Two coarsely chopped tomatoes
a bit of garlic

and cook for a few minutes.

Add 2 cups of water
1 beef bouillon cube
3 Tbs tomato sauce
a couple of pinches of oregano and a pinch of thyme
salt and pepper

and cook till half the water evaporates

Add 1/2 cup of raw rice, cover and simmer 20 minutes.

Sprinkle some feta and drizzle some lemon juice before serving.

Easy and pretty darn tasty.
