So, recently a colleague of mine and I have been debating some materials that we are working on.

He says, and so does Oxford dictionary and dictionary.com "We would like to pay our respects...."

I say, and so does Webster dictionary, "We would like to pay our respect..."

I perceived respect as an uncountable noun in this case, and therefore would not use an 'S' on respect.

How would you say it, and is it simply a matter of choice?

I would say:

We would like to pay respect
OR
We would like to pay our respects

But I definitely wouldn't say:
We would like to pay our respect

Edit: And the OED trumps Websters any day of the week.
