Im not sure how tough immigration is on this, some people said they had problems getting visas because of this problem; others didnt have a problem at all.

How does someone go about correcting this?

Will embassies/consulates be able to deal with this?

Im currently in Hong Kong, but I studied university in London.
Should i just goto the embassy here in HK and try and get a letter from them?

Or must it be form the university?

Did you get married? That usually works just fine if you show them your marriage license or certificate. Or is the last name written first and your given name backward?. If the case is the latter, a letter from the university will do just fine.

Im not married. I was born and raised in the UK and my parents are chinese so I was given chinese name at birth, which is on the passport.

Gradually I picked up an English name, so now my degree transcripts have my English name and my chinese name too.

Would the embassy/consulate in HK be able to deal with this?

I have no clue. If they both have your Chinese names it should be fine. However, I cannot speak with authority regarding your case.

I legally changed my last name about 11 years ago. Shortened it from 10 letters to 4...

Never had an issue with my diploma - or anything else.

But I did get a new degree diploma in my new last name and always carry a certified copy of the legal name change - just in case.
