So last Saturday evening I ventured out into the wilds of a Seoul Saturday night to meet two fellow Davers, ate some good eats and drank some good soju, and then drank some more. So on Sunday I was feeling a bit fragile.
So along about evening I was feeling hungry and also wanted something that would leave enough leftovers for a few lunches during the week. So after thinking about what I had on hand and what sounded good to eat, I settled on the idea of Chicken Pot Pie, but only if I could come up with a substitute for the crust. I was not up to rolling out dough, even if I had the counter space, which I don't yet. So I looked on the handy dandy AllRecipe.com site and lo and behold, found the idea of floating biscuits on top of the pot pie.
So I cooked up the chicken, chopped up the veggies and stirred up the flour and butter for the rich savory sauce with marjoram and thyme. No problem. So then I whipped up the biscuit batter:
2 cups of flour
1 cup of milk
1 T of baking powder
6 T of mayo
and a few healthy dashes of Parmesan for good measure
and dolloped it in big globs on top of the chicken pot pie, stuck it in the oven and voila! Out came a giant chicken pot pie with big fat biscuits floating on top.
Then the trouble began.
When I took the pot out of the oven and started to scoop out the piping hot chicken pot pie with lots of veggies in a savory sauce with marjoram and thyme and biscuits floating on top, the biscuits came loose from the pot and started floating up to my ceiling, dripping the savory sauce across my clean floor that my maid had scrubbed on Friday afternoon. I made the mistake of grabbing one biscuit as it floated past my nose and burned my hand.
So what did I do? Ever inventive, I grabbed my pot holders and (with a little jumping up and down) retrieved the biscuits that were bumping up against the ceiling. Thank the Lord that ceilings in Korean apts are low.
Putting mayo in the biscuit batter really does make 'em light and fluffy. It gets my Ya-ta Boy seal of approval for this week in good cooking tips. |
