Where are some good bookshops in Seoul to buy teaching books?

The Youngpoon Bookstore at the Express Bus Station (line 3 and 7) has a good selection of books and teaching materials (first floor for kids, second floor for older learners...)

Of course, there's Kyobo bookstore in Gwanghwamun, which is the biggest, but it's usually very crowded on the weekends. They has a newer, less crowded branch in Gangnam (green line, Gangnam station, exit 6, keep walking about ten minutes, in Kyobo tower building. Closer to exit 6 (around the corner) is Kim and Johnson's, which specializes in teaching materials. It's on the second or third floor of a building with a couple large restaurants on the ground floor...
