How easy is it to get a part-time job with E2 visa sponsorship?

Approximately 15 hours a week...

And, what would a typical contract include? No housing or airfare, I would guess.. but severance and medical insurance??

Never heard of it in public schools.

But some hagwons do take on part-timers (particularly YBM ECC and YES Youngdo).

Generally you would work 2 or 3 days each week (either Mon,Wed,Fri or Tue-Thu usually). Plus most hagwons also have winter/summer intensives which is usually a case of everyone working extra.

Housing and airfare would be negotiated on a case by case basis. But severance and medical insurance is standard for everyone.
