I've been teaching a freshman computer class for a few years now and I'm thinking about changing things in a mid-semester ignore the syllabus kind of way.

For the past few years I've been teaching basic:

Word
Movie Maker
Publisher
Excel
PowerPoint
Photoshop
Dreamweaver

Any programs not on the list that you think would be useful for students to learn?

Maybe throw in a class dedicated to open source programs? I assume it is a once a week 2 hours per thing? What about Windows XP and/or Vista? I think there are a lot of tools in these that most people don't know or use well.

I don't understand what you are asking. Is 'computers' a class or is it the course? What is the course? If it isn't computer related then why are you teaching Dreamweaver? If it is computer related then why are you asking random people on a web forum what you should teach?

Usability, website design, html, Email etiquette, Excel

GIMP is pretty cool, instead of photoshop. Similar, but free.

It would be cool and fun to teach your students about DVD authoring and editing videos.

Teach them to make their own DVD's (or VCD's) complete with titles and menus.

Adobe Audition (if they are interested in semi-professional audio) to complement Superhero's idea of Audacity.

Teach them about Active X and the shortcomings of the Korean internet. Seriously, internet security may be interesting.

actually I like this idea.

get premier pro and encore. Everyone owns a digital camera and a short video made there can be edited in premier. It's not necessary to have a DV camcorder
