Recently I've run across two products with an unusual flavour. First I bought my cat a can of special catfood for his birthday and discovered it was "chicken and collagen" flavour. Then for no reason we got some sort of package in the mail featuring collagen coffee.

Is there some sort of health benefit to eating collagen? As far as I can tell it's just a paste made up of the cartilage that separates joints. Not very appetising.

Anyway, my cat didn't have any wrinkles after eating this.

Yes, over time, collagen breaks down in the body causing aging. Collagen is what keeps your skin supple and wrinkle-free. I like those collagen beauty drinks.
