I bought so much ground beef from Costco! Besides taco meat and hamburgers, what can I use that to make? No meatloaf please... |

You can make Chili. Sloppy Joe's. Hamburgers (not the AMerican kind. Try the Japanese Hamburger (http://japanesefood.about.com/od/beef/r/jahamburger.htm) For added touch, you can put a fried egg on top of it.
I'll add ground beef to a other dishes. Putting ground beef in Shin Ramen is pretty tasty. |

I'd say...Swedish eatballs, shepherd's pie, pureed tomato and onion curry, and chili con carne.
Oops! I meant to say 'Swedish meatballs.'

Make involtini wrapped in egg plant, or a really greasy lasagne, or moussaka, or perhaps cottage pie. Maybe cornish pasties... or a nice big mince and cheese pie. Hope you have an oven.

If you are going to turn your nose up at meatloaf, made with Quaker Oats, then the only thing left is Porcupine Meatballs. Maybe not the ONLY thing...how about beef and noodles? Or Vegetable Soup?
PS: I HOPE it was AMERICAN beef....which would mean that MY Costco has American beef. |

Yeah, molly, I know a lot of us had bad childhood experiences with meatloaf, but if done right it's really something else...like, with a bunch of quartered mushrooms and two cans of condensed mushroom soup dumped over top of it, mixed with a bit of breadcrumbs and an egg, plus some onions, it's fekkin good. Like a big gravy-laden hamburger you can slice; what's not to like? |

Did they have the hard shell taco kits at Costco?
I didn't see them last time I was there. |

haven't seen the hard taco shells either. thinking about going to the itaewon foreign food mart, picking up some corn tortillas and frying those. should crisp em up a bit. |

beef salad !
Mexican style, Thai style, Greek style or simply fried beef with salt and pepper added to a green pepper salad or standard lettuce and tomato salad
plenty of recipes on the net, check them out and perhaps adapt them to create your own (I recall doing so when had a bunch of extra ground beef). |
