so i came across about a pound of homemade kimchi. it's mine, all mine!

it has got to be the most pungentest tasting rankest smelling thing to eat i have ever encountered.

it's much more powerful and complex than regular restaurant kimchi. and that makes me want to eat more of it! problem is i'm just about afraid of this stuff...

anybody else have the "homebrew" stuff? i'm sure some of the veterans around have had some pretty awesome rotten cabbage.

the homemade also differs by region.
the northern/near seoul kimchee varieties tend to be less intense in flavor (more pinkish red).
the southern/central parts of korea have the richer darker varieties, and they also taste fishier to me (they use more of that shrimp/krill sauce).

it can also be how long its fermented.
when its just made as well as when its too fermented are when the flavors are the strongest. the difference is the freshly made is crunchier while the too old is soggy to my taste.
there's a perfect window of eating time (which differs for each individual).

wow, rereading what i wrote, makes me think i've been eating too much kimchee!

I have about 5 pounds of homemade kimchi in my fridge.
The older female teachers of the school always fear for my health. Homemade is best because it's much spicier than the stuff they serve in restaurants.
