I was wondering if it is wise, once in korea, to try to obtain an e2 visa by overnighting your info back to the embassy in the states, and having them mail your info/passport back?

how are you going to enter the country with the Passport and included VISA which activates it if you don' leave Korea?

No, if you're in Korea, you do what is called a visa run to another country such as Japan after landing a job. No sending documents to the Korean embassy elsewhere like you would if still at home, but instead, you carry the documents and wait a day or two to pick them up at the Korean embassy. The advantage is hand selecting your job in person; the disadvantage is you pay for your flight to Korea. I understand if you're going for a public school job, it won't matter as you can't know the location or meet the co-teacher and principal you will be working for until you have been hired and placed so you might as well get them to pay for your flight over by setting up the visa from home. For hagwons, it's better to hand pick on the ground, but many of us set our job up from home. For university teaching, you will have to be here to get the job and do a visa run, most likely Japan, which most likely you have already been in Korea for at least one year and know your way around in order to get a university job.
