It seems to vary.. seemingly its 12:30 on weekdays.. and 11:30pm on Friday & Saturday??

It this right?

1 am M-Friday, midnight Sat-Sun. depending on the station you're at, the last train generally is between 12:30-12:45 I think. I know most stations post when the last train for each direction is. They aren't well posted though at every station; you have to seek them out sometimes.

And that's only w/in Seoul, so if you're going outside it (ie incheon, ansan, ilsan, etc) the last trains are before midnight every day of the week.
