No, you shouldn't use "take over" as in your first sentence. Here, take over is a phrasal verb that means "take control":
Mr. Jones is resigning from the project. Mr. Smith will take over starting next Monday.
If you use take over in the context of time, it is to show that an activity, trip, etc. went longer than a specific time frame:
It took us over three hours to hike up the mountain.
Your second example sentence is fine
