1. Why would the random death of children gunned down in school be an example? (If coping with the man who shoots in school would be an example, it makes sense to me.)
2. Can I replace 'project' with 'make a plan'?
3. If not, what does 'project' mean?

The random death of children gunned down in school is an example of a horrible situation that stretches our coping skills beyond their limits. We have trouble dealing with it.
I'm not sure about project here, but I think it's closer to "go beyond" or "look past" but someone might have a different opinion.
