What is "American mind"?
Is it Americans' way of thinking or acting?
Is it different from "American spirit"?

I am an ESL teacher in the US and am going to take a stab at your question.
The "American mind" is as you were thinking - a way of seeing the world. It may be optimistic; it may be self-serving; it may be arrogant at times, too.
I think it is related to the "American spirit," but there is a difference. The "American spirit" is something that may draw people from other countries to America. The "American mind" is not as easily defined nor "caught." A person can move to America, but that person may never think like an American - that is the "American mind."
