It's correct if you mean one policeman who has more than one uniform.
The police's uniforms are cool. OK |

I couldn't say the second sentence. Instead, I would say, "The police uniforms are cool," probably using "police" as an adjective. I could never use "police" with a possessive. Note: The police station, the police car. That belongs to the police.  |
