Holy smokes - It's an exclamation that expesses shock, awe, disgust and/or other strong emotions. It's the same as Holy cow, Holy moley (or moly - I don't think moley has a meaning, but is used solely because it ryhmes with holy), Holy sh|t (a vulgarity), Holy crap (a milder vulgarity), and probably several other variations.

Smokin' - Slang contraction of "smoking." It means "very sexy" in some contexts (like "hot"). In others, it means "remarkably good" (either always or for a brief period of time). A basketball player who makes 22 baskets in 26 attempts in a game was smokin'.
