Either...
I work on Sundays means you work every Sunday.
I work on Sunday means you work this Sunday, but not necessarily every Sunday. |

using the plural form, sundays, does not necessarily mean that you work every sunday - it simply means that you work more than one sunday. maybe that is the only day of the week that you work (i work on sundays), maybe you work several sundays in a month (i work these sundays this month - pointing on a calendar as you are speaking to someone), or many sundays in a year.
