1. Quality time is what counts-those shared experiences when we really focus in on our children. What is focus in on? Can you give me more examples because I can't find "focus in on " in the dictionary.

2.It can be ongoing as adults stop what they are doing every so often and pay attention to a child. What does every so often mean? Can you give me more sentences?

It means "pay attention to".

It means "once in a while" or "every now and then". Some more sentences:

I go to the store every so often.
Every so often, I have to reset my computer.
