They want to know what people actually saw happen ― to witness the clear evidence themselves.
I'm not sure if it is possible to use see(Verb) and then happen(verb)
without object between the two verbs. |

Yes, it is OK. Usually there is a pronoun subject for the second verb, but it is not a necessary adjunct:
I saw him leave.
We heard them cry out.
In your sentence, what is the pronoun:
What did you see happen?
I saw the event happen.
