Are the tenses and grammar correct?
1. If I were the Mother, I wouldn't let my daughter date with this guy. In my opinion, I would ask her to date with a man who had a stable income.


2. I should have written something about my mom for the Mother's Day for my ESL class.
If I had written, I would have gotten chance to practice my writing. If I had practiced my writing through meaningful topic, I would remember grammar easier.

3. I wish I had been to Spain. I wish I had gone to Spain.
4 Do we honor live people?

If I were a mother I wouldn't let my daughter date this guy. I would ask her to date a man with a steady income.
You don't date with someone but you have a date with someone.

You can say, stable income it is not wrong, but steady seems to be used more often to describe an income that comes in every week, or month, reliably

I should have written something about my Mom on Mothers' Day for my ESL class. If I had (written), I would have had a chance to practise my writing on a meaningful topic, and would remember grammar easier.

You can say gotten, but it is almost exclusively an American usage, nowadays. The English themselves do not use it any more.
