Below is some part of my e-mail I sent to my friend. When wring this, I was confused about which one I had to use "fine to" or "fine with." Could you explain how you use these differently? If you find any other inappropriate expressions or errors, I will also appreciate any feedback. Thanks.

What about on Monday whatever time after7:00 pm you feel more convinient with, which should be also fine with me as I will be at the house before the meeting. Just let me know the time and place. (Tipen, I believe they won't be open by 5:30. I've not eaten dinner there yet. But any place like Dragon or others is fine to me as well; I'm usually a good eater.) Bye for now.

Someday,
Hello, from your question and example, the most natural sounding
would be "fine with me".
But truthfully, you could use either one and it would be good.
You could also say "fine by me".
I hope this helps.

someday,
Hello.
You're welcome.
You could use it in the same example.
Another example might be:
Person #1: "Hi, would you like to go see a movie and then have dinner?"
Person #2: "Yes, that sounds fine with me!"
I hope that helps.
