Barbecue (or barbeque or bbq etc.) is very popular in the American South. Actually, it refers to the method of cooking... not to the actual food itself. (Although the food being bbq'ed is often tacitly understood)

In the South, bbq usually means pork, unless you specify something else. In Texas, it means beef. Well.... cowboys and all that, you know.

This creates great opportunities for controversy among different regions, about the best thing to barbeque. There is also considerable debate about the best type of sauce. In the "Deep South" a thicker ketchup based sauce is most common, whereas in North Carolina, a vinegar-based sauce is more popular. In South Carolina, many devotees favor a mustard-based sauce.

BBQ originated as a slow-smoke-cooking method, designed to render "bad" cuts of meat tasty. Typicaly BBQ method is over a slow (about 230 degrees F.) smoky fire, so that cooking is done with hot smoke that penetrates the meat, until the meat's internal consistency deteriorates and it "falls apart."

Cooks also debate about the kind of wood to add to the "base" of charcoal. Hickory and oak are popular. Frankly, IMHO this is an overrated factor... I tend to use whatever kind of loose hardwood crap is lying on the ground in my yard, so long as it's not a soft wood like pine.

A great tradition is to bbq a whole pig (after it is cleaned). This takes about 12-15 hours and a suitable cooking apparatus is made from concrete blocks. If beer is present -- de rigueur in America -- the cooks may be so snockered by the end that the quality of the food is irrelevant.

We also barbecue:

Fish
Ribs (beef or pork)
Chicken
Turkey
Dove
Quail
Duck
and even ...Pizza !

so it is not necessarily unhealthy. It depends on what you start with. BBQ fish is delicious and even real health nuts would have trouble criticizing it.

I am keen on BBQ. I remember that once we even went to BBQ on the seashore every other week. Absolutely, the food is delicious & tasty. As a matter of fact, preparation had much more fun, we must go to the supermarket to buy food, it always lasted for half the day. And then was the BBQ time. What I really enjoyed was the laughter and warm during BBQ, friends got together, talked sth funny, made jokes, which was really unforgetable.
