Hi,

Is it "Thank you for your interest in..." (interest from each individual person present) or "Thank you for your interests in..." (all people present)?

Can we say anything else?

It is an honour that you show interest in ...

Is the above a bit much?

No, use "interest" even if it is a huge crowd.

I am pleased to see so many participants this morning.

It's great to see so much interest in this topic.

This is a very nice turnout. I'm glad to see you all here.
